Healthy Spinach and Banana Muffins.

A couple of months ago, my sister-in-law found a recipe for these delicious spinach and banana toddler muffins. She made some for us and little miss LOVES them! I actually think they are pretty good too!

They are super easy to make. You can check out the recipe here.


In the original recipe, the suggest using a blender or food processor for the wet ingredients. I personally like using a food processor. It gets the spinach and banana processed really well with no chunks. I like it smooth. After it’s processed, add it to the dry and mix it up.


It’s a pretty thick batter. But I like that it’s thicker. I used a small cookie scoop to make mini muffins. They are perfect size for my little miss. Make sure you spray your pan so the muffins don’t stick.



And then they come out all yummy and fluffy and good.

I really hope you try these. They really are delicious. They’re good for your little ones AND as a healthy snack to grab and go in the morning. So go make them. Like, now.



So…. it’s been a couple of years! After I graduated from college, I pretty much just let this blog go! Just recently I have felt the urge to just write about anything and everything.

A few things have happened since the last time I blogged. Graduated from college. I got married. Changed jobs a few times. Had a baby. You know, just the usual things. I am glad to say that Andrew and I have been happily married for 3 and a half years and our daughter just turned ONE! Pretty crazy, right? But it has definitely been a fun adventure.

Lyla is absolutely wonderful. She is so fun! She talks a lot. She LOVES food (just like her mama). She makes me laugh and smile everyday. I can’t imagine life without her. She knows what the elephant, monkey and snake say. Loves to dance and make any kind of music. Her nickname is “Turkey”. She is just perfect and I love her so much! For her first birthday party, the theme was pink and gold. I think it turned out great! It was fun to have friends and family gather together and celebrate our special little one. I have never really been very good at writing, but I am excited to dive into it. I hope you all enjoy!

One Week to Go.

I can’t believe that there is only one week left until the wedding! Technically, it’s less than one week. We’re getting married at eleven in the morning. So by this time next week, I will be a married woman!!

I remember way back in the beginning when Andrew and I were counting down from the 80’s, 60’s, 30’s, 10’s, and now the 1’s. I can’t express how excited I am! I’m not nervous at all. Maybe when the day actually comes, I will. Usually I get SUPER nervous when a big event is about to take place. But if I don’t, I’m totally okay with it!

Anyway, I just wanted to take the time to write a little post before next week. Things are probably going to get really crazy around here (more so meaning my mother ;)), but its going to be a lot of fun! After the wedding and after our “pre-honeymoon”, I will be posting pictures of the big day. So that those of you who couldn’t be there can experience it also!

Dancing with Cinderella.

I knew right away what song I wanted to dance to with my father at our wedding reception. I have had the song picked out for a while now. I just really love it and I’ve always loved the artist who sings it. The song it called Cinderella by Steven Curtis Chapman.

I love Steven Curtis Chapman. He is a Christian singer. When I was younger, we would go to his concerts as a family. We even got to go backstage a few times to meet him. I still have a CD cover that he signed. My uncle Terry was his stage manager. Pretty awesome, right? I thought so.

Anyway, my dad and I have always liked listening to Mr. Chapman. I have most of his songs still memorized. Listening to him brings back good memories. Since we both love him, I knew that this song was perfect for us. Just take a listen. 🙂

Destination Honeymoon: Mexico.

Right after the wedding, Andrew and I will be going on our “pre-honeymoom”. The night of the wedding, we are going to stay at a hotel – I’m not sure where or anything because he won’t tell me. He wants it to be a surprise! After that, we are going out to Tillamook, Oregon and staying at a little bed and breakfast by the coast for a few days. That should be fun!

In May, we will be going on our “real honeymoon” to Mexico for a week and a half. I have always wanted to go to Mexico! It’s been on my list of places I want to go since I can remember.

Andrew’s grandparents have a house in San Carlos in the state of Sonora in Mexico. For those of you who don’t know where this is, Sonora shares a border with Arizona. San Carlos is right on the coastline.

Looking at the map, you can kind of see that San Carlos is a ways down there. We will be flying into Arizona and then driving down to the house.

I’m pretty excited! The house is right on the beach. The back porch is actually right above it.

One thing that is really great, is that Andrew can speak Spanish fluently. He learned this from his two year mission in Mexico. This means that we can go shopping and not get ripped of by anyone because he can understand what they are saying. I always wish that my dad had taught us kids how to speak Spanish. I know some things. But not enough to get by.

One of the things that Andrew always says he loves about me is that I am half Mexican. And I guess it goes both ways because I love that he can speak Spanish! 😉

I can’t wait to finally get to go to Mexico. I know that Andrew and I will have so much fun. And let’s hope that I get tan!!

Flower Power.

What’s a wedding without beautiful flowers?! Well, I’m not sure what it would be. I am having an assortment of flowers at the wedding. They will be used for my bouquet, the groomsmen and Andrew’s boutineers, our mothers and grandmother’s corsages, and center pieces at the reception.

My most favorite flower is the orange gerbera daisy. Isn’t that just perfect for the wedding! We will have these in my bouquet and in the center pieces.

Another flower I really like are the calla lilies. I just think they’re really pretty. In my second term of baking and pastry at school, we made wedding cakes. I made calla lilies out of fondant to put on top. I thought that they turned out really great. Unfortunately, I don’t have a picture of them, but here is what a real calla lily looks like:

Another flower we are going to have are orange alstroemerias. These flowers have some yellow in them also. If you look online, there are darker orange ones, and some that have some red in them also.

We had to incorporate some blue of course, so there will be blue and white pompom flowers. I couldn’t find a picture of any blue pompoms, so here is a picture of some white ones. Just imagine blue ones being that flower. 🙂

The last and final flowers we will have are orange and white roses. Roses are so beautiful!

I am really happy with the flower choices that we made. i know they are going to make everything so much more beautiful and colorful. Only 11 more days. I can’t wait!! 🙂

My Feelings as of Now.

Today will probably not be a very long post, but I just wanted to take the time to express how I am feeling at this point.

There are only 12 days until the wedding. Holy moley! Less than two weeks! I can’t even begin to describe how excited I am to be married. Especially to the most amazing man in the world – Andrew. 🙂 He is my best friend. I am so excited to spend the rest of our lives together!

It’s kind of crazy to think about. I am getting married. All of my friends and family are so supportive and are just as excited as I am. I never thought this is how my life would go, but I am so happy that it did. I am 19. Now, I know that most people nowadays are thinking that I’m getting married too young, but I’d have to disagree. I’m not too young. Back in the day, people were getting married at ages way younger than I. They knew, just like I know that this is the person I want to spend the rest of my life with. Without a doubt, Andrew is my soulmate. My one and only. ❤

I am super anxious and so is Andrew. We just want to be married already! I’m not nervous or scared or anything, and I hope he isn’t either. I’m glad that we didn’t have a long engagement. I don’t think I’d be able to wait another three or four months to get married! I’m anxious and excited and happy! I can never stop smiling when I think about being with Andrew. My life is so happy!

My mom has gotten in the “crazy marriage” mode. She’s stressing and freaking out. I’m not at all. And neither should she! This is supposed to be a happy and fun time, there is no room or time to be stressed! She’s afraid we’re going to miss something or not have something that we need. But the truth is, if that does happen, it doesn’t matter. Because I know that either way, mine and Andrew’s day is going to be so special. None of that stuff is going to matter a year from now. Two years. Ten. I know that I am going to be happy, even if we do forget something.

Usually I stress out, like my mom, when a big event is going to take place, but this is different. I am happy. I am so so happy. And I can’t wait to be married! 🙂
